2 Bananas
150 grams Almond flour
120 grams Almond milk
1 teaspoon Almond butter
1 egg
¼ cup blueberries

Instructions

Preheat oven to 350 degrees
Separate the egg yolk and egg white
Add bananas, almond flour, almond milk, almond butter and egg yolk to bowl
Mix together until completely combined. Approximately 3-4 minutes on medium speed with paddle mixer
Whip egg whites to stiff peaks
Add half of egg whites to batter and mix until combined.
Add second half of egg whites until combined.
Add blueberries to batter until combined. Don't overmix
Add batter to mini cake molds
Bake at 350 degrees for 30-40 minutes. Use a toothpick to test when cakes are finished. Toothpick should come out clean when cake is finished.
